Amberjack are found from the coast to well offshore and are schooling fish. They are a prized gamefish that is known to be strong and powerful.

Ahi Tuna is the largest tuna species, is a close relative of the yellowfin tuna. Ahi has a mild, meaty flavor - similar, some say, to swordfish. It’s more flavorful than albacore. The meat is bright red in its raw state but, when cooked, turns brown to grayish-tan, firm and moist, with large flakes. Yellowfin is also served raw as sashimi and in sushi.

Swordfish is moist and flavorful with a slightly sweet taste and is excellent for marinating and grilling. Steaks have a moderately high oil content and a firm, meaty texture.

Marlin steaks are ideal for simple, high-heat cooking methods like grilling or broiling. The rich taste can be savored with plain seasonings like salt and pepper or a squeeze of lime.Marlin has a firm, meaty texture, similar to that of swordfish, and a rich, full flavor.

Orange Roughy is an extremely deep-living species characterized by slow growth, great longevity (>100 years), They averages 3 1/2 pounds, the fillet size is generally 6 to 8 ounces, has a mild, delicate flavor and moist, large-flaked meat that holds together well after cooking. Raw orange roughy flesh is pearly white, and it cooks up to an opaque white.

Sea Bass (Patagonian toothfish) has a rich, melt-in-your-mouth flavor. The moderately oily meat is tender and moist with large, thick flakes. Meat from raw sea bass is snow white. It is an excellent fish for grilling, but the skinless fillets must be handled carefully so they don’t fall apart while cooking. You can also poach or sauté the meat, but avoid heavy sauces that compete with the fish’s own full flavor. Because of its high oil content, sea bass also lends itself to smoking. The same characteristic makes it unsuitable for frying.

Wahoo/Ono is mild-tasting, with a firm, lean texture and large, circular flake. Grilled wahoo has been compared to chicken or veal in flavor. Use a cooking methods suitable for species with low fat content such as grilled or broiled, especially if marinated first to tenderize it and enhance the mild flavor.

Catfish because they are grain-fed, farmed fish, catfish have a consistently sweet, mild taste. It absorbs other flavors readily. The moist, dense meat is firm and has less flake than the typical whitefish.

Mahi Mahi is the most beautiful fish in the ocean with it's rich iridescent colors.  It has a sweet, mild flavor similar to the swordfish. The lean meat is fairly firm in texture and has large moist flakes. Mahi is great for grilling.  The skin should be removed before cooking.
