Atlantic Cod can grow to 2 meters in length and weigh up to 96 kilograms (210 lbs). It can live for 25 years and matureity is generally attained between ages 2 to 4, but can be as late as 8 years. Colouring is brown to green with spots on the dorsal side, shading to silver ventrally. A lateral line is clearly visible. Its habitat ranges from the shoreline down to the continental shelf which is 12 - 200 nautical miles, but can be farther under certain circumstances. They are mild in flavor, moist and a white flakey texture.

Haddock easily recognized by a black lateral line funning along its white side. Most commonly found at depths of 40 to 133 m (130 to 436 ft)  and has a range as deep as 300 m (960 ft). It trives in temperatures of 2 to 10 C (36 to 50 F). Haddock feed primarily on small invertebrates, although larger members of the species may occassionally consume fish.

Monkfish is the English name of a number of types of fish in the northwest Atlantic, mostly notably the species of the anglerfish genus Lopius.  They grow to a length of more than 1.5 m (5 ft); specimens of 1 m (3 ft) are common. They are often referred to as "The Poor Man's Lobster".

Cod Tongues and Cheeks are muscles found on the floors and sides of the mouth which manipulates our food thus providing a firm, and dense texture.

Mackerel are a schooling fish and tend to stay close to shore in the warmer waters. Therefore, they are extremely active and migratory fishes, moving constantly to other regions. The have high unsaturated fats including Omega 3s.  

Pollock are a deep water fish and are believed to migrate during spawing and are a member of the Cod family. A projecting  lower jaw with a barbel and pointed snout distinguish them from other similar fish.

Sea Perch are not really perch but rockfish. They are mild tasting yet a bit sweet, with a moderately firm texture. The meat is lean, moist and flaky. This fish is also called Redfish.
